Cheesy Veggie Burger | McVeggie Burger Recipe



We're making cheesy veggie burgers these veggie burgers are packed full of fresh vegetables and they're so deliciouseven my carnivore of a husband who usually demands meat with every meal absolutelyloves them I've got two small potatoes in the pan over here that I've peeled andchopped into small chunks and then we'll add two carrots that I've also peeledand chopped into small chunks we're going to cover with water bring to theboil and then simmer gently for ten minutes now we're going to add the broccoli and the green beans to the pan these have also been chopped into little chunks as well so let's have those in we're going to cook those for two minutes so the idea is for the carrots and the potatoes to be nice and soft and for the broccoli and the green beans to have a little bit of bite and to retainthat vibrant color now we drain the veg and then we transfer to a bowl now we're going to give those potatoes a little bit of amush together with a fork that mushed up potato will act as a really good binder to keep the burgers together .

Now we'll add 150 grams of strong cheddar cheese next in goes 50 ml of double cream and areally good pinch of salt pepper then mix that all together I've allowed to mix it to cool a little and I'm gonna cover in cling film and place in the fridge for about an hour to firm up it's been nearly an hour so now I'm going to get the coating for the burgers ready I've got two eggs whisked in a bowl here and some seasoned flour 50 grams with some salt pepper and 75 grams of panko breadcrumbs since we'remaking the burgers in the oven I'm going to add a little bit of olive oil directly to the panko breadcrumbs about two tablespoons and then we'll mix allthat together so that the oil coats every grain of the panko and that wayyou don't have to drizzle oil unevenly over the burgers before you put them inthe oven we're also going to add in a little sprinkling of paprika and that will just give it a little bit of extra colour now the mixtures been in the fridge for about an hour we're going to form it into six patties.


 now we've formed that into a patty I’m going to dip it in the flour first and then the egg makes sure you get it all over I want to leave any exposed bits of flour and then dip it in the breadcrumbs and then place it on a baking tray now we bake these in the oven at 220 C for 20 minutes they're nearly ready so I've got some seeded brioche buns and I'm gonna brush the inside with a little bit of oil and then toast them in a hot pan now it's time to assemble we're going to go with some lettuce tomato red onion and a little bit of burger sauce which is actually ketchup or Mayo mixed together.so there's my cheese and veggie burger it guaranteed winner at dinnertime and a great way to sneak in some extra veg for the kids hmm that’s a tasty Mcveggie cheese burger or cheesy veggie burger .
