Kothimbir Vadi Maharashtra Snack

Kothimbir Vadi Recipe -

Today we're going to make another snack from the Maharashtra Kothimbir Vadi recipe .first we're going to make a batter out of this besan, add little water do not add too much so that we're going to make first into a paste you know if you had too much then it'll form lumps now make this without lumps first we're going to add mustard for tempering when the mustard seed splutters add cumin, ajwain you know as soon as you add ajwain do not let it color otherwise it will give you a bitter taste and now immediately add crushed garlic, crushed ginger, and green chillies. 

In Maharashtrian cuisine, you know adding tempering and then adding you know garlic ginger and green chillies is a very common thing; pinch of hing, turmeric, jeera powder, and garam masala you know this is all flavoring for this pour in the mixture of besan and water and continuously stir you know now this has to become thick you know without forming any lumps, yeah and that's why you know you keep the flame little bit low before this thickens too much add some salt when this slightly thickens add all the chopped coriander, powder of roasted peanuts and then mix this. 


This is becoming like a paste that is how it is supposed to be wow you can add a little bit of oil and then mix it make sure all that peanut mixture is also very nicely mixed, now switch off the flame here I have a tray which I have coated with some oil, in this just put this mixture, ok and now we're going to make it just like as if you're going to set burfi now you know once you kind of level it a little bit what you can do is just put a plastic paper and then you know with the hand just you can level it even more now you can see that we have set it like burfi ok now we're going to let it cool down and then cut it to the right sizes and we're going to make the awesome tasty Kothimbir Vadi, once this is a set aside for like 30 minutes this will become like rock-solid not rock solid but solid just cut them into nice cubes just after you cut them just put them on a plate for frying add into the hot oil. 


Fry them till they're nicely golden in color and they become crispy and drain it on a paper towel They are slightly crispy from outside but the moment you put in the mouth these melt; these literally melt in the mouth try different snacks from different-different states and see if your family loves them, if they love it, tear the recipe and put it in your regular menu of snacks and food.
